Filé powder is crafted from the dried leaves of the sassafras tree. Native Indians in the region were the first ones to use this as a seasoning.  When the French Canadians arrived in Louisiana, file powder was swiftly integrated into traditional Creole cooking.  Filé powder has a woodsy flavor, similar to root beer.  Use in traditional sausage or seafood Creole gumbo and enjoy!
