Ceylon cinnamon is also known as "true" cinnamon, and is what is used in Mexico and throughout Europe.  Ceylon's oil content is lower than cassia's, at 1-2%, resulting in a lighter, less spicy and more vanilla, floral flavors.  We love using ceylon cinnamon on spiced fruit, hot cocoa, puddings and whipped cream. We grind our Ceylon cinnamon in house weekly for maximum freshness.
