Founded in the 1920s, Paolo Scavino is a Piedmontese winery located in Castiglione Falletto, now run by the third and fourth generations of the family. The company owns approximately 30 hectares of vineyards divided into small parcels in some of the most iconic sites in the wine region. The Nebbiolo grapes for this Barolo are sourced from the Bricco Ambrogio vineyard, the most prestigious parcel in the municipality of Roddi, situated approximately 275 meters above sea level. Here, the vines enjoy south- or southeast-facing exposure and are rooted in marly, calcareous soils. After manual harvesting, fermentation occurs in stainless steel tanks using indigenous yeasts, and the finished wine undergoes an aging process that includes 11 months in neutral oak barrels, 13 months in large oak barrels, 8 months in stainless steel, and 6 months in the bottle. The result is an expressive wine that combines the essence of Barolo with the unique terroir and the artisanal attention of the Paolo Scavino winery. In the glass, it reveals a clear ruby color with garnet highlights and an intense, mature aromatic profile, featuring notes of raspberry and cherry, complemented by floral and spicy aromas. On the palate, it is elegant and well-structured, with ample body and velvety texture, featuring well-integrated tannins and balanced acidity. The finish is long and harmonious. Try it with the beef fillet with porcini mushrooms.
