Located in Gevrey-Chambertin, Côte de Nuits, Burgundy, Domaine Jean-Michel Guillon & Fils was founded in 1980 with just over 2 hectares of vineyards. Today, led by Alexis, Jean-Michel's son, it owns approximately 15 hectares in numerous appellations in the area, producing excellent, award-winning Chardonnay and Pinot Noir wines. The grapes are sourced from the Premier Cru La Perriere, one of 26 in the Gevrey-Chambertin appellation, the largest production area in the Côte de Nuits. Here, the vines are rooted in the stony soils of an old stone quarry. As with all the estate's wines, fermentation occurs spontaneously, and the finished wine ages in new oak. In the glass, the wine reveals an intense ruby ​​color and a broad, expressive aromatic profile, with notes of red and dark fruits, such as currants, cherries, and wild berries, interspersed with spicy notes, licorice, and some earthy touches. On the palate, it is rich, elegant, and smooth, with a good complexity of flavors and robust yet soft tannins. It has a well-balanced acidity and a long, lingering finish that evokes mineral notes. It is a wine capable of aging well for a couple of decades. If you can't wait, try it with pigeon or roast partridge, or guinea fowl breast stuffed with mushrooms.
