Nestled in the hills of Australia's Barossa Valley, Hentley Farm is a boutique winery founded in 1997. The family-run company produces a wide range of wines from both local varietals, such as Shiraz, Grenache, and Cabernet Sauvignon, as well as other international varieties, including Zinfandel and Viognier, with a focus on single-estate wines. Clos Otto Shiraz is Hentley Farm's most iconic and representative wine. The grapes, from ancient Shiraz clones, are sourced from the G block, which is planted on shallow, red clay soil. The vineyards, with very low yields, enjoy eastern exposure, which ensures slow and uniform ripening. After manual harvesting and fermentation, the wine ages in French oak barrels (55% new) for 22 months. The result is an elegant wine capable of aging for a couple of decades. In the glass, it reveals a deep, dark red color with purple highlights. Its aromatic profile is broad and rich, with notes of plum and blackberry, spicy and smoky touches, hints of licorice, and a mineral undertone. On the palate, it is powerful and full-bodied, dense and balanced. It is complex and concentrated, with a fresh acidity, soft tannins, and a long, persistent finish. Have it with pulled pork.
