Located in La Roda in Castilla La Mancha, Envinate is a prestigious winery producing a range of wines from across Western Spain including the Canary Islands, Galicia, and the South East. The founders are 4 oenologist friends who share the management of the various productions. The Canary Islands are managed by Roberto Santana. Fermentation takes place with whole bunches and the wine is then aged in neutral French oak barrels for 11 months. The wine, produced in small quantities, is a blend of Vijariego Negro, Negramol, Moscatel Negra, Listán Negro, and Listan Gacho. The grapes come from vines planted ungrafted on volcanic soil in a typical old Tenerife vineyard called Margalagua and located on a steep slope above the Atlantic Ocean. Envinate Taganan Parcela Margalagua is a deep and concentrated wine with an intense flavor profile full of fruit, flowers, wild herbs, and spices. On the palate, the wine is rich and flavorful, mineral, and with pleasant saline notes. It is an elegant wine with a fresh and long aftertaste. Serve it at 15-16°C, with a juicy rosemary rack of lamb or herb-marinated pork.
