Son of the renowned Bernard Boisson, founder of the homonymous estate in the 1980s, Pierre took over the family business with his sister Anne (also a winemaker) in 2017. Both retained part of the vineyards to produce their own wines. Pierre in particular works on approximately 3.5 hectares of vineyards located near Meursault, in the heart of the Côte de Beaune. Pierre Boisson Bourgogne Les Belles Côtes is an elegant and refined white Burgundy that reflects the winemaker experience and his attentive, traditional style. Made from Chardonnay grapes, the wine displays a luminous straw-yellow color with silver highlights. Its aromatic profile is expressive and fragrant, with the mineral character typical of wines from the Côte de Beaune. On the nose, it opens with aromas of peach, lemon, and white fruit, followed by floral notes of acacia and honeysuckle on a flint background. On the palate, it is lively and fruity, generous, and silky. It has a crisp acidity that cleanses and refreshes the palate, and a clear minerality that lingers on the long finish, accompanied by light toasted notes. It's very versatile when pairing with food: it's excellent with lobster, seafood, roast turbot, scallop or truffle risotto, and even pairs well with poultry.
