Drink it now or cellar for up to 20 years. No need to decant, but best to open it half an hour before service. Located in the heart of Chablis, Domaine Besson covers nearly 21 hectares of vineyards. The estate is owned by Alain Besson, who took over the business from his father, also a winemaker, in 1981 and now manages the vineyards and the cellar with his children Camille and Adrien. The Chardonnay grapes come from a vineyard of less than 2 hectares, planted on clay-limestone soil, rich in fossil oysters of Exogyra virgula. After a careful selection and manual harvesting, fermentation takes place mostly in steel and only a small part in oak barrels. The wine then ages for 18 months on the lees in stainless steel vats and partly in barrels. The Chablis Grand Cru Vaudesir has a clear straw yellow color with beautiful golden reflections. Its aromatic profile is broad and complex with floral and honey notes, followed by generous buttery and mineral aromas. On the palate, it is round and balanced with a good concentration and a marked mineral vein. It is fresh and lively with a long, pleasant finish. It is delicious as an aperitif or with fresh cheeses and also pairs well with shellfish and poultry.
