Initially founded in Montelupo Albese by the oenologist Beppe Viola in 1991, the Ca' Viola winery is now housed in a beautiful 18th-century villa located in Dogliani in the province of Cuneo. The company which today extends over 14 hectares of vineyards, distributed between Montelupo and Novello, produces typical high-quality Langhe wines - Dolcetto, Barbera, and Barolo - with a philosophy based on a few interventions in the vineyard and the cellar. The vineyards located in Montelupo are characterized by plants over 40 years of age planted on slopes on a terrain similar to that of Serralunga. The Novello vineyard, on the other hand, where Nebbiolo grapes are grown, is located at an altitude of 470 meters in the small cru of Sottocastello. After fermentation with indigenous yeasts, the wine rests for 24 months in large barrels. The Barolo Caviot of the Ca Viola winery has a ruby red color and garnet reflections. On the nose, the wine reveals an intense and broad aromatic profile with floral notes of violet and rose, typical of Nebbiolo, aromas of red fruits of the undergrowth, and light balsamic notes on the finish. On the palate, it is well structured with velvety tannins and good balance. The finish is long and persistent. Perfect with roasts and game stews.
