Founded in 1989 in Washington state, Andrew Will Winery is based on Vashon Island and produces Bordeaux blend wines with grapes from some of the Columbia Valley's finest vineyards, including Two Blondes, Champoux, and Ciel du Cheval. Sorella from Andrew Will Winery is a limited-production blend (approximately 9,000 bottles) composed primarily of Cabernet Sauvignon, with additions of Merlot, Cabernet Franc, and a small amount of Petit Verdot. The grapes come from the Champoux vineyard, located on sandy, clay-rich soils in the Horse Heaven Hills, not far from the Columbia River. After vinification, the finished wine ages for 22 months in French oak (30% new). In the glass, this wine reveals itself as elegant and complex, with a broad and fragrant aromatic profile characterized by notes of dried flowers such as violet and rose, fruity aromas of plum, ripe fig, cherry, final hints of aromatic herbs and mineral touches. On the palate, it is concentrated, balanced, and powerful, without ever being too bold or opulent. It has a medium body, lively and balanced acidity, and firm yet well-integrated tannins. It is juicy, smooth, supple, and approachable, with a long, fresh, and satisfying finish. It is a wine that can age in the cellar for a couple of decades, but can be enjoyed immediately, paired with short ribs or a beef stir-fry.
