Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour. The Dalamara family has been producing wine since the second half of the 19th century, but it was in 2009 that the company was taken over by Kostis, the sixth generation of the family and a talented winemaker, considered one of the rising stars of the Greek wine scene. Today, Dalamara Winery, located in Naoussa, produces high-quality wines combining the region's winemaking traditions with contemporary techniques. Xinomavro grapes come from vineyards of about 15 years old, organically grown, and planted on naturally sandy and chalky soils. After the harvest and a maceration period of about 2 weeks, fermentation occurs spontaneously and the finished wine then rests in barrels (20% new) for 6 months. In the glass, the wine takes on a bright color with ruby tones. Its aromatic profile is broad with notes of ripe plum, black cherry, and raspberry, followed by hints of tomato, typical of the grape variety, and a spicy and herbaceous background. On the palate, it is generous, round and fruity, with dry and well-integrated tannins and a lively acidic vein that provides freshness. It has a medium body and a long finish that recalls hints of chocolate and sweet spices. It is excellent with red meat or grilled lamb.
