Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Located in Naoussa, the Dalamara family winery has been producing wine since 1800. The company was then taken over in 2009 by Kostis Dalamaras, the sixth generation of the family who implemented the company's production with the first single vineyard wine and organic viticulture practices. Paliokalias is a wine produced with Xinomavro grapes, the most representative red grape variety of Greece, coming from a 6-hectare vineyard located at the foot of Mount Vermio, about 240-300 meters above sea level. Here, the vines, some of which are over 80 years old, are organically grown and enjoy a southern exposure and a soil composed of porous rock. After vinification, the wine rests for 1 year in oak barrels. In the glass, the wine is a bright, dense crimson red with violet highlights. Its aromatic profile is broad and intense with notes of cherry and raspberry, black olive, and tomato leaf, over a tobacco background. On the palate, it is expressive, rich, and velvety, with a medium body and delicate acidity. It has firm, well-integrated tannins and a long finish that recalls mineral notes. It is a wine of great character, capable of aging well for a couple of decades, but excellent to open now with grilled meats, braised beef with mushrooms, or mature cheeses.
