Drink it now or cellar for up to 10 years. No need to decant, but best to open it an hour before service. The Gavalas family has a long tradition of winemaking dating back to the late 1800s. Today, the winery focuses on the production of high-quality wines from indigenous grape varieties of the island of Santorini. The winemaking operations take place in their small but modern winery in Megalochori. The Assyrtiko grapes come from over fifty-year-old vineyards located in Megalochori, Akrotiri, and Pyrgos. Here, the vines sink their roots into the volcanic soils typical of Santorini and enjoy a Mediterranean climate. After the harvest, vinification takes place in the classic way, with fermentation at a controlled temperature in steel, and the finished wine rests on the lees for five months. Santorini Assyrtiko from Gavalas Winery is a dry and youthful white wine with a light straw yellow color and greenish reflections. On the nose, it reveals a wide and fresh aromatic profile with vibrant notes of citrus fruits such as grapefruit and bergamot, pear and pineapple, and floral and mineral hints. On the palate, it is soft and fruity, juicy, and well structured with a marked and well-balanced acidity and a clear mineral vein that extends on the long finish. Serve it well chilled with fish and seafood dishes, baked feta pasta, and grilled octopus.
