Drink it now or cellar for up to 15 years. No need to decant but best to open it half an hour before service. Situated on the picturesque volcanic island of Santorini, Greece, Vassaltis Winery was established in 2016, and in its young life has already achieved international critical and commercial success with its excellent wines from indigenous grape varieties. Owner Yannis Valambous is supported in the winery by two talented winemakers Yannis Papaeconomou and Elias Roussakis. Gramina Cuvee des Vignerons is an elegant and characterful wine made with 100% Assyrtiko grapes from three plots located in Vourvoulos. After manual harvesting and whole bunch pressing, fermentation takes place in oak vats. The finished wine then rests on the lees, before being bottled and a further 7 months of bottle aging. In the glass, the wine reveals a clear golden color, illuminated by greenish reflections. Its aromatic profile is broad and complex, with citrus and stone fruit notes, floral hints of jasmine, and aromas of honey and bread crust. On the palate, it is rich, concentrated and full-bodied. It has a fruity character and a well-defined mineral vein. It is well structured and balanced, with a long finish with saline hints. It is excellent with seafood, mollusks, and fish, but also pairs well with white meats in buttery sauces.
