Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. Domaine de Montille has a very long tradition dating back to 1750. Unfortunately, over the centuries the estate was broken up, to be later recovered by Hubert de Montille in 1947. Today the estate covers about 35 hectares of vineyards managed by Etienne, Hubert's son. The Pinot Noir grapes come from a plot located on the top of a hill on a very stony marl near the town of Les Fèves. Here the vines, grown according to organic and biodynamic standards, enjoy unique soil and climate conditions that guarantee the production of mineral and structured wines. After manual harvesting, fermentation takes place mainly in large wooden vats and the finished wine rests in 228-liter barrels. The name of the Cru refers to the old quarries that were located nearby. The Beaune Premier Cru Les Perrieres is a lively and generous wine that seduces the nose with a broad and fragrant aromatic profile with notes of red fruits and graphite, followed by discreet woody notes and delicate spices. On the palate, it has silky tannins and a medium body. It is soft, juicy, and elegant. The finish is long and slightly spicy. It is a wine capable of aging deliciously for a couple of decades but can already be enjoyed now with a pork tenderloin with mushrooms.
