Drink it now or cellar for up to 15 years. No need to decant but best to open it half an hour before service. Located in the Chablis wine region, Domaine Gautheron is a historic estate, which today extends over approximately 30 hectares of vineyards spread across various appellations. The company, which has been passed from father to son since 1809, is today led by Cyril Gautheron who carries on the family tradition with great dedication. The Chardonnay grapes come from the 1er Cru Les Fourneaux, on the right bank (where the Grands Crus are also located), on a poor soil composed of clay and stones. After selection and harvest, fermentation takes place at a controlled temperature and the finished wine then rests in vats, according to tradition. In the glass, the wine reveals a clear color with pale gold tones, and a broad and mature aromatic profile, with notes of tropical fruits and apricot, floral hints, vanilla, and a balsamic and spicy touch. On the palate, it is powerful, fruity, expressive and fresh. It has a meaty texture, a well-balanced acidity, and a mineral vein that lingers in the finish. Try it with mussels with mushroom cream sauce or crab.
