Drink it now or cellar for up to 15 years. No need to decant but best to open it half an hour before service. Domaine Gautheron is a renowned Chablis winery with a long tradition dating back to 1809. The estate today extends over approximately 30 hectares of vineyards managed by Cyril Gautheron, the seventh generation of the family. The Chardonnay grapes come from the 1er Cru Mont de Milieu, whose name refers to its ancient position on the border between the Duchy of Burgundy and the County of Champagne. Here, the vines, about 35 years old, are rooted in a unique terroir composed of limestone and rich in Kimmeridgian marine fossils, and enjoy a south/southeast exposure and protection from the winds. As usual in Chablis wines, the climate and soil play a fundamental role in producing wines with great freshness and minerality. After fermentation, the wine rests in vats. In the glass, the wine reveals a pale gold color and a ripe and intense aromatic profile with notes of citrus, stone fruit, and wildflowers. On the palate, it is generous and broad, fresh and lively. It reveals a perfect balance of fruit and mineral notes with an elegant character and a long refreshing finish. It is a versatile wine when paired with food: it is excellent with scallops, escalope of foie gras, chicken in mushroom sauce, or stuffed guinea fowl breast.
