Domaine Guatheron is a winery in the Chablis region founded in 1809 and passed down from father to son for 7 generations. The company, which today owns about 30 hectares of vineyards, has been led by Cyril Gautheron since 2001 and produces high-quality wines in the various Petit-Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru appellations. The Chardonnay grapes for this refined Chablis come exclusively from the 1st Cru Vaucoupin vineyard, located on the right bank of the river (close to the Grands Crus appellations). The vines, aged between 20 and 40 years, benefit from a south, south-west exposure and a terroir of white Kimmeridgian limestone. After traditional vinification in temperature-controlled vats, the finished wine is aged in vats. The result is an elegant wine of remarkable complexity. Chablis Gautheron Premier Cru Vaucoupin reveals a brilliant pale gold color with slight greenish reflections. Its aromatic profile is young and expressive, with fruity notes of citrus, green apple, and pear, followed by floral notes and a touch of honey and hazelnut. On the palate, it is lively, mature, complex, and soft, with a well-balanced acidity and a clear mineral vein. The finish is long and recalls light saline notes. Pair it with baked sea bass or poultry.
