Founded in 1809, Domaine Gautheron is a 7-generation family winery located in Fleys in Chablis and currently led by Cyril Gautheron. The estate's vineyards extend over approximately 30 hectares cultivated with respect for nature and the terroir, to produce high-quality wines that express the exceptional value of this splendid French region. The Chardonnay grapes for Chablis Vieilles Vignes come from vines over 60 years old planted on clay-limestone soils, which give the wine a marked minerality. The vineyards also benefit from a continental climate particularly favorable to Chardonnay with hot summers and cold winters that guarantee the full ripening of the grapes and the preservation of freshness. In the glass, the wine shows a bright color with pale gold tones and an expressive and fragrant aromatic profile with citrus and floral notes, mineral and vegetal hints. On the palate, it is rich and generous, fresh and lively. It has a marked mineral note and a balanced acidity. The finish is long and recalls notes of hazelnut. In food pairings it is a versatile wine: it is excellent with scallops, oysters, grilled fish, and poultry in white sauce.
