Located in Fleys, a small village on the eastern hills of Chablis, Domaine Gautheron is a historic estate founded in 1809 and passed down from father to son. Today the property extends over just under 30 hectares of vineyards spread across the appellations of Chablis, Chablis Premier Cru and Petit Chablis. The company produces its wines with a traditional approach while using the most modern techniques in the cellar, to best enhance the pure expression of the terroir. Domaine Gautheron's Chablis is a traditional and elegant wine made from Chardonnay grapes, grown on the region's typical Kimmeridgian soils that give the wines their characteristic minerality. After harvest, fermentation takes place at a controlled temperature in steel tanks and the finished wine is aged in steel. In the glass, the wine reveals a clear golden color and a delicate and fresh aromatic profile with aromas of citrus, apple, white flowers, and flint. On the palate, it is lively and mineral, rich and rounded. It has a medium body, an invigorating acidity, and a long and refreshing finish. It pairs well with seafood, white fish, or poultry in light sauces, sushi, and fresh goat cheeses.
