Cellar for up to 15 years. Serve chilled. The Fevre family have always had a deep connection with Chablis, having been coopers and nurserymen in this part of Burgundy since 1745. In 1923 Bernard Fèvre took things a step further by founding the local cooperative La Chablisienne where he and his son both served as president. Bernard’s grandson Gilles and his wife Nathalie took things in a new direction in 2003 when they built their own winery and began bottling wines under their own family label. This magnificent Premier Cru from the Fevre family comes from a special 2.20 hectare plot just next to the Grand Crus planted on top quality clay and limestone soils. While Gilles takes charge in the vineyards, farming this plot organically and using sustainable methods, Nathalie vinifies and matures this wine on the lees for 12 months. She also ages 20% of the young wine in new oak barrels to add more depth and polish. The nose delivers classic Chablis notes of zingy citrus, green apple and richer orchard fruit along with whispers of toast, vanilla, and brioche from the lees and oak ageing. The first sip reveals a medium body carefully balanced by a bright streak of acidity and minerality which lingers on the palate. It’s the ideal wine to serve alongside richer seafood and fish dishes or to keep in the cellar for a few more years if desired.
