Cellar for up to 10 years. Serve chilled. The Fevre family firmly believe that great wine begins with great grapes. In the vineyard Gilles works their 99 hectares using sustainable methods and 25% of the land is farmed organically. His wife Nathalie takes care of the winemaking and cellars along with their daughter Julie. The winery has been specially designed so the grapes move through the various stages by gravity and each plot is vinified individually in small temperature-controlled tanks. This Chablis Vieilles Vignes comes from select plots close to the village of Fontenay-près-Chabis which include vines planted by Gilles’ great-grandfather Marcel in the 1950s and 1960s. Once in the winery the grapes are vinified and then aged on the less for 18 months to add extra complexity and depth. The result is an elegant yet powerful Chablis that perfectly captures the quality of the terroir as well as the terrific personality of the Chardonnay grape. On the nose you’ll be captivated by ripe peach, green apple, and apricot notes along with a bright chalky minerality and hints of salinity from the terroir. The intensity and polish of this wine makes it a great way to start a special meal or an elegant partner for seafood and shellfish starters.
