Cellar for up to 8 years. Serve chilled. The Fevre family have been involved in winemaking for almost 300 years, working as coopers and nurserymen for generations in the Burgundy region. In 1923 Bernard Fèvre founded the local La Chablisienne cooperative. The family sent all of their grapes until 2003 when his grandson Gilles and his wife Nathalie decided to start making and selling their own wines. The couple have now been joined in the family business by their daughter Julie, and together they look after 99 hectares of vines using sustainable practices wherever possible. Their classic Fevre Chablis is a testament to their passion and dedication, with grapes harvested by hand and each plot vinified separately in small stainless steel tanks. The young wine is aged on the lees for 10 months and then very lightly filtered before bottling. The quality of the terroir dominates here, with a powerful streak of minerality and a strong backbone of mouthwatering acidity balanced by ripe orchard fruits like peach and pear. This is a terrific Chablis to enjoy as a refreshing aperitif or to pair with the freshest oysters, grilled fish, or clams. Enjoy young and fresh or cellar for a few more years to soften the zingy acidity.
