Cellar for up to 5 years. Serve chilled. Nathalie and Gilles met when they were both studying enology in Dijon. Many years later they continue to make fantastic Chablis wines alongside their daughter Julie who also trained as an enologist. The whole Fevre family are passionate advocates both for Chablis and for the environment. They use sustainable methods wherever possible in their vineyards and vinify with small stainless steel tanks which allow them to vinify each individual plot separately. This classic white Bourgogne is a great introduction to the Fevre house style which typically shows off the character of both the Chardonnay grape and the terroir. Grapes are grown on rich clay soils on a specific 1.65 hectare plot of the Fevre family vineyards in the village of Fontenay-Près-Chablis. After careful handling the young wine is aged on the lees in stainless steel tanks. In the glass you’ll immediately notice the delicate aromatics of spring orchard blossom and toasted almonds followed by hints of green apple, zingy citrus, and fresh pair. On the palate there’s a refreshing acidity paired with a light body and smooth texture thanks to the lees ageing. The combination of freshness and aromatics makes it a great match for roast chicken, lobster dishes, or a rich seafood pasta.
