Girolamo Russo is a renowned Sicilian winery located in Passopisciaro, on the northern slope of Etna. Its vineyards, organically grown, extend over approximately 18 hectares and include some centuries-old plants. The company is very attentive to the enhancement of the territory and produces a range of high-quality wines based on local vines that are highly appreciated by the public and critics. Etna Rosso San Lorenzo is a blend dominated by Nerello Mascalese, with the addition of small percentages of Nerello Cappuccio. The grapes come from Randazzo, in the Contrada San Lorenzo. Here the vines, aged between 70 and 100 years, enjoy an altitude between 750m and 780m above sea level and a volcanic-sandy soil, rich in minerals. After a period of maceration and spontaneous fermentation in steel, the finished wine rests in large second-passage oak barrels for 1 and a half years. In the glass, the wine reveals an intense ruby ​​color and a fragrant and expressive aromatic profile with notes of red fruits and flowers, and hints of aromatic herbs and tobacco. On the palate, it is complex, soft and full-bodied. It has velvety tannins and a marked acidity. It is elegant and warm with a long finish that recalls a mineral vein. Try it with pappardelle with hare sauce.
