Founded by Jules and Auguste Devaux, the company remained in the hands of the same family until the late 1980s, when, due to a lack of heirs, it passed to Union Auboise. The quality of its extraordinary wines, however, has not changed, and the company is still considered one of the most renowned in the region. Produced with Pinot Noir and Chardonnay grapes harvested in the best plots of the Côte des Blancs and Côte des Bar, only in the best years, the D Millésimé champagne is one of the most emblematic Devaux wines. After fermentation in stainless steel tanks, the finished wine rests in the bottle for 7 years. Champagne Devaux D Millesime is a wine of great elegance and complexity. In the glass, it reveals a brilliant color with golden tones embellished with a fine and persistent perlage. Its aromatic profile is fragrant and fresh with notes of wildflowers and white fruit, lemon peel, sweet spices, and brioche. On the palate, it is round and tasty, juicy and fruity, with an invigorating acidity and a delicate mousse. It has a creamy texture and a long finish that recalls mineral notes. Try it with scallops, lobster risotto, or shrimp tempura.
