Domaine Lavantureux is a family-run winery founded by Roland Lavantureux in the 1970s and now run by his sons Arnaud and David, who, in addition to expanding their Chablis range with Grand Cru and Premier Cru wines, have also begun producing red wines. The estate covers some 20 hectares of vineyards in the northernmost part of the Chablis appellation. The Pinot Noir grapes come from a 3.5-hectare vineyard located in the Epineuil appellation and planted by Arnaud and David's grandfather between 1969 and 1978 on calcareous clay soils, very similar to those of Chablis. After fermentation, the wine rests 75% in barrels and the rest in steel. The Bourgogne Epineuil Les Fauconniers from Domaine Lavantureux is an extremely elegant and expressive wine. In the glass, it reveals a clear ruby ​​color with purple highlights and a broad and lively aromatic profile with rich notes of red fruits and flowers, followed by hints of peppery spices. On the palate, it is juicy and fresh, soft and balanced with a long finish with light mineral hints and some spicy notes. It is excellent with all game birds, and pork tenderloin.
