Drink it now or cellar for up to 20 years. No need to decant, but best to open it half an hour before service. Located in the northern part of the Chablis wine region, in the village of Lignorelles, Domaine Lavantureux extends over approximately 20 hectares of vineyards spread across the appellation and is today managed by the two sons of founder Roland Lavantureux. The Chardonnay grapes come from less than one hectare of Grand Crus parcels of the Vaudésir appellation located in the village of Chablis on the right bank of the Serein River. Here the vines enjoy a south/southwest exposure and deep clay-limestone soils. After fermentation in steel tanks, the wine rests for over 10 months in a mix of steel (20%) and barrels (80%). The soil and climate conditions combined with careful work in the cellar guarantee the production of powerful, balanced, and mature wines. The Chablis Grand Cru Vaudésir is an intense, mineral, and characterful wine with a rich and broad aromatic profile with notes of yellow and tropical fruit, and vanilla hints. On the palate, the wine reveals a perfect balance between power and freshness. It is rich and dry, crisp and mineral. The finish is long and gently spicy. It is very versatile in food pairings: it goes well with lobster, capon, and foie gras.
