Located in Lignorelles, Domaine Lavantureux is a family estate that has been passed down from father to son and is now run by David and Arnaud, twice awarded as the best young winemakers in the region. In the vineyard and in the cellar, the work is meticulously followed to enhance the terroir and let it express itself in the wines. The estate produces a wide range of Chablis wines that are widely praised by critics and the public. The Chardonnay grapes come from vineyards planted in the 1980s and located in the villages of Lignorelles, Beine, Villy, and Ligny le Châtel. After fermentation in stainless steel, the wine is aged 3/4 in steel and 1/4 in used barrels for over 10 months. This process allows for the creation of a balanced and complex wine that does not lose its fresh character. This Chablis is an expressive and mineral wine that reveals a broad and lively aromatic profile on the nose with notes of citrus, white and yellow fruit, and floral scents. On the palate, it is fresh and soft, fruity and crisp with a sharp acidity and a strong mineral vein in the background that lingers into the long finish. It is excellent with grilled fish and seafood. Alternatively, try it with medium-aged Comté cheese.
