Founded in 1846, Champagne Devaux is a historic family-run company located in Bar-en-Seine, in the heart of the Cote des Bar. The Champagne House, which passed to the Union Auboise in 1987 due to the lack of heirs in the family, owns around 140 hectares of vineyards cultivated using sustainable practices, with full respect for nature and the terroir. Coeur des Bar Rose is a blend of a majority of Pinot Noir (part of which is vinified in red and a small part in rosé with the 'saignée' technique) and about a fifth of Chardonnay. The grapes are sourced from vineyards located in Montgueux, Vitry, and Côte des Bar. After vinification, reserve wines are added for a 20-25% of the blend. This delicious rosé champagne reveals a bright color with salmon pink tones and a lively and fruity aromatic profile with notes of wildflowers and small red fruits. On the palate, it is fresh and round, juicy and delicious with fine bubbles which give a creamy texture, and a long finish characterized by a sweet note of ripe fruit. It is excellent as an aperitif, served with mixed salads or charcuterie, and it works perfectly with grilled prawns.
