Located in the northern part of Greece, in the region of Naoussa, at the foot of Mount Vermio, Markovitis is a winery formerly known as Chateau Pegasus. The company, now led by Markos Markovitis, the third generation of the family, was the first in Greece to practice organic farming. One of the great features of this winery is its production of Xinomavro, an indigenous grape with an austere character, which Markos grows in the vineyard of about 24 hectares planted by his grandfather in the 70s. The Xinomavro grapes for this vibrant rosé are hand-selected and spontaneously fermented in steel with indigenous yeasts to preserve the fruity freshness and vivacity of this grape. In the glass, the wine reveals a clear and bright salmon color with orange highlights. Its aromatic profile is captivating with floral and red fruit notes, orange peel, and some hints of tomato typical of this variety. On the palate, it is fresh and fruity with a medium-light body and a marked acidic vein. The finish is long and recalls notes of red fruits. Try it with aubergine parmigiana, ratatouille or tomato tarte tatin.
