Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. Located in the Slovenian Collio, a few kilometers from the border with Italy, the Domaine Vicomte de Noüe Marinič enjoys a strategic position and unique soils, composed of clay-limestone marl, which gives its wines their typicality. The company is in organic conversion with the aim of later adopting the biodynamic regime. The Chardonnay grapes are selected from a vineyard of about one and a half hectares, located at 165 meters above sea level. The vines, which have an average age of 25 years, sink their roots into a soil composed of marl and limestone sandstone, locally called Ponca. After manual harvesting and vinification with indigenous yeasts, the finished wine rests for a year in used Burgundian barrels and for another 12 months in stainless steel. In the glass, the wine reveals a clear and brilliant color with golden tones and a broad and ripe aromatic profile with notes of tropical fruits, pear, apple, and grapefruit, hints of hazelnuts, and toasted touches. On the palate, it is fresh and round, juicy and complex with a marked mineral vein that lingers in the long finish. Excellent with roasted sea bass, scallops, and poultry.
