Founded in 2016, Domaine Petit Roy is a small Burgundy winery located in Chorey-Les-Beaune that produces biodynamic wines (without certification). The estate is owned by Seiichi Saito, a talented winemaker who, after working in wineries in Japan, decided to start his wine business in this prestigious corner of France. Domaine Petit Roy Fusion Bourgogne Aligoté is made with grapes sourced from the Aux Boutières plot located in Savigny-lès-Beaune, in the heart of Burgundy. The vines, planted in 1983, enjoy clay-limestone and marly soils that guarantee the development of an extraordinary mineral character. After fermentation in barrels with indigenous yeasts, the finished wine rests for 9 months in used barrels. The use of sulfur during the various steps is kept to a minimum and the wine is bottled without fining or filtration to preserve the pure character of the wine. In the glass, the wine reveals a bright color with straw yellow tones. Its aromatic profile is fresh and lively with notes of peach and apricot, pear, and yellow apple, followed by mineral hints. On the palate, it is fresh, juicy, and lean with a vibrant acidity and a strong mineral undertone that lingers on the long finish. It is a wine that best expresses the graceful and vibrant character of Aligoté. It is excellent as an aperitif, with light vegetarian dishes and mixed salads.
