Domaine Petit-Roy was founded in Chorey les Beaune by Seiichi Saito, a Chinese winemaker who settled in Burgundy. Despite the small size of his estate (just over 2 hectares distributed in regional appellations), Seiichi's wines immediately attracted the attention of the public and critics for their pure character and exceptional quality. The company practices biodynamics in the vineyard (although without certification), and applies a philosophy of minimal intervention in the cellar, with spontaneous fermentations, minimal use of SO2, and bottling without fining or filtration. Hautes CĂ´tes de Beaune Mainbey from Domaine Petit-Roy is an elegant white wine made only with Chardonnay grapes grown on typical Burgundian clay-limestone soil. Fermentation takes place with whole bunches and the finished wine rests in used oak barrels. In the glass, the wine reveals an intense straw-yellow color with almost golden reflections. Its aromatic profile is fresh and expressive with notes of citrus, ripe pear, and apple and hints of honey and brioche. On the palate, it is juicy and round, elegant and harmonious, with a pleasant refreshing acidity and a long finish that recalls notes of brioche and baking spices. It is excellent as an aperitif, served with fish and seafood appetizers, and also pairs well with pasta Carbonara and chicken Caesar salad.
