Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour. The Mirafiore winery has a long history dating back to 1858 when it was founded by Emanuele Guerrieri Conte di Mirafiore. After years of success and popularity, in the 1930s, the company went bankrupt, probably due to the damage caused by phylloxera and to poor management. Finally, in 2009, the Mirafiore brand was reborn, bringing back to light the magnificent Cru Barolo wines of its great tradition. The company has been certified organic since 2018. Paiagallo is a great Cru of Barolo, characterized by an excellent aging potential. The grapes are selected and harvested by hand. Vinification takes place in steel tanks and the finished wine rests for a year in barriques and one in large Allier barrels, to refine the tannins and ensure the right balance between the woody influences and the varietal character. This elegant Barolo has an intense and brilliant color with ruby ​​tones and garnet reflections. On the nose, it reveals a broad and complex aromatic profile with fruity notes of blackberry, plum, and cherry followed by spicy hints. On the palate, it is soft, juicy and concentrated. It has velvety tannins and a perfect refreshing acidity. The finish is long and pleasantly spicy. It is an elegant and harmonious wine that pairs well with red meat stews and mature cheeses.
