Founded in 1831 in Monthelie by Bernard Bichot and then transferred to Beaune by his grandson Albert in 1912, Maison Bichot is a company that includes 6 wine estates (Domaine Long-Depaquit, Domaine du Clos Frantin, Chateau Gris, Domaine du Pavillon, Domaine de Rochegres and Domaine Adelie) that extend over a total of about 100 hectares of vineyards, in addition to its distribution activity. The Chardonnay grapes for Secret de Famille are selected and hand-picked from a series of plots located around the villages of the Côte de Beaune, where the rich clay-limestone soils guarantee the production of high-quality whites. After harvesting and fermentation partly in barrels and partly in vats, the wine rests on the lees in a mix of steel tanks and oak barrels for 10-12 months. This elegant Bourgogne Cote d'Or Chardonnay is a youthful, fresh, and expressive wine with a fragrant and lively aromatic profile with notes of citrus, apple, and pear, followed by hints of white flowers and touches of honey. On the palate, it is round and mineral, with a pleasant refreshing acidity and a long and persistent finish that recalls notes of dried fruit. Serve the wine with grilled poultry or white fish in sauce.
