Located in Chablis, Domaine Daniel-Etienne Defaix is ​​one of the most prestigious estates in the wine region. This family business with 4 centuries of tradition, owns about 28 hectares of vineyards among the oldest in Chablis, characterized by the typical Kimmeridgien soil (composed of clay-limestone marls with many fossilized oysters in them) and historic cellars from the 12th century. Its production focuses on 7 Chablis, including Premier Crus and Grand Crus, and a single red. The Pinot Noir grapes come from an old vineyard of less than one hectare, originally planted in 1900 on calcareous and ferruginous soils. After spontaneous fermentation, the wine rests in tanks with natural decantation of the lees. In the glass, the Bourgogne Rouge from Domaine Daniel-Etienne Defaix has a bright cherry red color and a fresh and attractive aromatic profile with notes of red and dark fruits. On the palate, it is round and juicy, lively and fruity. It has a good structure, velvety tannins, and refreshing acidity. The finish is long and persistent and recalls clear mineral notes.
