Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Established in the late 1970s in Lignorelles, in the Chablis wine region, Domaine Lavantureux is now directly managed by Arnaud and David, sons of founder Roland Lavantureux. Starting with 5 hectares of vineyards, the estate now has 20 hectares spread across several parcels, where the Lavantureux family cultivates their vines with passion and great respect for the exceptional terroir at their disposal. The Chardonnay grapes are hand-picked from a plot located on a hill about 300 meters in the commune of Lignorelles. The vines, planted between the 1980s and 2000s, benefit from a unique clay-limestone soil, rich in micro-oysters, which gives the wine a saline character. After fermentation in steel, the finished wine rests for over 10 months, half in steel and half in wood (a mix of new and used). In the glass, the Chablis Vauprin from Domaine Lavantureux reveals a bright color with straw yellow tones and greenish highlights. Its aromatic profile is broad and ripe with notes of wildflowers, fresh yellow fruit, and clear mineral hints. On the palate, it is taut, lively and crisp. It has a medium-light body and a strong refreshing acidity. The mineral notes return in the long finish. Try it with grilled fish or a mushroom risotto.
