Drink it now or cellar for up to 10 years. It is recommended to decant it for half an hour. Envinate is a project started in 2005 by four winemakers and friends Laura Ramos, Alfonso Torrente, José Ángel Martínez, and Roberto Santana, who met while studying enology. The company makes high-quality wines in Galicia and the Canary Islands, focusing its production on the valorization of ancient varieties and historic vineyards. Camiño Novo is a blend composed mainly of Mencía with small additions of Garnacha Tintorera. The grapes are sourced from a small amphitheatre-shaped plot in Ribeira Sacra, in the main sub-zone of Amandi, 430 meters above sea level. The vines, over sixty years old, benefit from a cool climate, south-east exposure, and not very fertile slate soils. After vinification, the finished wine ages in used French oak barrels for almost a year. In the glass, the wine reveals an intense and brilliant color with dark ruby tones and a broad and fragrant aromatic profile with notes of red fruits and aromatic herbs followed by gentle spicy hints. On the palate, the wine is smooth, expressive, and fruity with firm and well-integrated tannins and balanced acidity. The finish is long and elegant and recalls spicy notes. Try it with spit-roasted pork, lamb chops, or game birds.
