Drink it now or cellar for up to 8 years. No need to decant. Eisele Vineyard is a renowned California winery located in Napa Valley that has been producing wines since the 1970s, although its history goes back much further. Today, the 65-hectare estate is managed by François Pinault and Artemis Domaines with the help of winemaker Hélène Mingot. The wine is a blend of a majority of Sauvignon Blanc Musqué and about a third of Sauvignon Blanc. The grapes, organically grown in the estate's vineyards in Napa Valley, were harvested in various stages to ensure full ripeness and good sugar content. After vinification, the wines rest for 12 months in a mix of steel, cement, new oak, and used oak for 12 months. This gives a greater roundness to the palate without affecting the freshness of the wine. Sauvignon Blanc from Eisele Vineyards is a vibrant wine with an aromatic character. On the nose, it reveals fresh notes of citrus and tropical fruit followed by aromas of white flowers such as jasmine and hawthorn and some light spicy hints. On the palate, it is round, savory and soft. It has a lively refreshing acidity and a creamy texture. The finish is long and lively with delicate mineral notes that linger for a long time on the palate. It is excellent as an aperitif but absolutely unbeatable with seafood and shellfish.
