Located a few kilometers from Colmar, in the Alsatian village of Beblenheim, Domaine Bott-Geyl has about 14 hectares of vineyards, some of which are Grands Crus sites, cultivated organically and biodynamically. Cremant d’Alsace Absolu Grande Cuvée Extra Brut is a refined and elegant sparkling wine, produced with a blend of Pinot Blanc, Riesling, and Chardonnay, from plots located in the municipalities of Beblenheim, Zellenberg, Riquewihr. After manual harvesting and the first fermentation, the wine undergoes a second fermentation in the bottle, where it then rests for 40 months on the lees before disgorging. This long rest gives it complexity, consistency, and balance. The low dosage enhances the dry and mineral character and its fruity notes. Overall, this wine is an extraordinary example of Cremant d'Alsace. In the glass, the wine reveals a bright straw-yellow color and a broad and fragrant aromatic profile with floral, citrus, and green apple notes, followed by light hints of bread crust. On the palate, it has a creamy texture and lively acidity. It is soft, easy-to-drink, and youthful with a long and refreshing finish that recalls delicate mineral notes. It is excellent as an aperitif, with vegetable or shrimp tempura, and with omelettes.
