A bouquet of white peach, gooseberry, fresh cut grass, and a touch of pineapple are followed on the palate by clean flavors of passionfruit, lychee, and lime. A slightly steely and herbal finish continues for much longer than expected. Because this wine has a bit more punch, complexity, and verve than most simple Sauvignon Blanc’s, it has the ability to pair with more interesting food. Try seared scallops, spicy prawns, Thai-style fish cakes, or grilled monkfish curry. David Clouston, the renowned winemaker and proprietor at Two Rivers, spent 22 years working abroad in Oregon, Chile, Corsica, and Alsace, before returning home to his native New Zealand and founding Two Rivers. The Convergence Sauvignon Blanc is so-called because it is a beautiful ‘convergence’ of fruit from 5 vineyards in the Awatere, Southern Valleys, and Rapaura sub-regions on the South Island. Fermented at cool temperatures in stainless steel to preserve fruit characters, this wine also spent 3 months on the lees to add texture and complexity to the palate.
