Drink it now or cellar for up to 30 years. It is recommended to decant it for an hour. A prestigious winery in the Langhe Piemontesi, Paolo Scavino was founded in 1921 in Castiglione Falletto. Today the company, led by Paolo's children together with his granddaughters, extends over approximately 29 hectares of vineyards. Here the typical varieties of the Langhe (Nebbiolo, Barbera, and Dolcetto) are grown together with international vines such as Chardonnay and Viognier. The Nebbiolo grapes for this elegant Barolo are carefully selected from the Monvigliero Cru, located in the municipality of Verduno. Fermentation takes place in steel at a controlled temperature and the finished wine ages in oak barrels for 12 months, followed by 14 months in large barrels, before bottling. Paolo Scavino's Barolo Monvigliero is a characterful and elegant red with a clear ruby ​​color and garnet reflections. On the nose, it reveals a complex and layered aromatic profile with floral notes of violet and dried flowers, aromas of red fruit jam, and then spicy and toasted hints. On the palate, it is powerful and balanced, with firm tannins and a subtle, well-balanced acidic vein. The finish is long and recalls toasted and coffee notes. It is a wine that calls for substantial and structured food such as braised red meat or game.
