Founded in the late 1990s, in the heart of Argentina's Mendoza wine region, Achaval Ferrer is renowned for its premium wines produced with a philosophy of minimal intervention in the vineyard. In the winery, the modern architectural style reflects the commitment to modernity and innovation. Quimera by Achaval Ferrer is a blend of Malbec from the Luján de Cuyo area, Cabernet Sauvignon from Tunuyán and Junin, Merlot and Cabernet Franc from the Uco Valley and small additions of Petit Verdot. The variety of vines and terroirs guarantees the production of a complex, elegant, and structured wine. After the harvest, the grapes are fermented separately. The finished and assembled wine then rests for 13 months in new French oak barrels. Its name has a double meaning. It refers to the search for the impossible, understood as the search for the perfect wine, but also to the chimera of Greek mythology that represents a beast composed of various animals, a bit like the blend of this wine. In the glass, the wine reveals a fruity aromatic profile with notes of plum and blueberry, mineral, and earthy hints. On the palate, it is rich and generous, concentrated with velvety tannins and a good structure. The finish is long and juicy. Try it with pulled pork or a succulent steak.
