Paolo Scavino Barolo Bric del Fiasc 2020

100

Drink it now or cellar for up to 30 years. It is recommended to decant it for an hour. Established in 1921 in Castiglione Falletto in Piedmont, the Paolo Scavino winery is a renowned family business that bears the name of its founder. Generation after generation, today, the company led by Enrica and Elisa, Paolo's granddaughters, produces highly prestigious wines from its 29 hectares of vineyards spread across 20 historic crus. The Nebbiolo grapes for this Barolo cru grow on a Tortonian soil made of marl and grey clay-silty marl, with some plots characterized by layers of grey-yellowish sand and portions of clay. After vinification, the wine rests in barriques for 12 months and then in large barrels (always French oak) for another 12. In the glass, Barolo Bric del Fiasc shows a bright ruby color with some garnet reflections. Its aromatic profile is broad and elegant with initial notes of dried flowers and violets, fruity aromas and earthy hints, licorice, and spices on the finish. On the palate, it is powerful and characterful. It has fine tannins, a full body, and a pleasant refreshing acidic note in the background. The finish is long and complex. Leave it in the cellar for a couple of decades, or enjoy it now with game dishes and mature cheeses.
