Drink it now or cellar for up to 30 years. It is recommended to decant it for an hour. Founded in 1991, Casa Castillo is a family winery located in the Jumilla wine region in the Sierra del Molar area. The company, which covers approximately 402 hectares of land, of which 150 are vineyards, is today led by José Mª Vicente Sánchez-Cerezo, the third generation of the family. Las Gravas by Casa Castillo is a blend of Monastrell and small additions of Garnacha. The grapes are sourced from a vineyard located on the hill overlooking the property. Here, the vines, planted in the late 80s, enjoy stony soil and a Mediterranean-continental climate. The vinification takes place in a traditional way and separately for the two varieties, and the finished wines rest in barrels of various sizes for 20 months before bottling. In the glass, the wine reveals an intense color with cherry red tones and a broad and complex aromatic profile characterized by elegant fruity and spicy notes, mineral hints, and tobacco leaves. On the palate, it is fleshy, fresh and fluid. It has a Mediterranean character, a good structure, and fine and velvety tannins. The finish is long and recalls delicate balsamic notes. It is the ideal wine with lamb tagine or grilled pork chops.
