Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Black Canvas is a New Zealand winery founded by flying winemaker Matt Thompson and his wife Sophie Parker, Master of Wine, in 2013. The couple produces excellent, internationally acclaimed wines using artisanal methods and working with single vineyards. Their experience and passion are reflected in their wines, which are strong expressions of the best of New Zealand terroirs. The Pinot Noir grapes are sourced from the Anthem Vineyard in the cooler part of Central Otago. Here the vines are rooted in alluvial loess derived from shale. All cellar operations follow the company's philosophy with minimal intervention, spontaneous fermentations, and no filtration. In the glass, the Blank Canvas Anthem Pinot Noir reveals a clear and brilliant color with deep ruby tones. Its aromatic profile is intoxicating and broad with a bouquet rich in notes of strawberry, cherry, and rose, followed by spicy and woody hints. On the palate, it is fresh and refined, energetic and well-structured. It has soft and well-integrated tannins and a good streak of acidity. It is round and silky with a long and fruity finish. Try it with roast duck or mushroom risotto.
