Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Made in limited quantities, Capensis wines hail from the Western Cape of South Africa, one of the oldest and most prestigious wine regions in the world. The name of this project, focused on the production of Chardonnay, is a tribute to this dramatic and beautiful land; Capensis is, in fact, the Latin word for "of the Cape". Capensis is part of Jackson Family Wines founded by Jess Jackson and his wife Barbara Banke. The vineyard practices are managed by Cedrick Delport, while Cape Town native Graham Weerts is the winemaker who leads the production. The Chardonnay grapes come from two mountain vineyards located in the Stellenbosch district, Fijnbosch and Nooitgedacht. Here the cool evening sea breezes ensure freshness and full aromatic expression of the Chardonnay. Capensis Silene Chardonnay is an elegant and mineral wine with a vibrant and fresh aromatic profile with citrus and stone fruit notes, and some floral and crème brulée hints. On the palate, it is full and round, refreshing, and with a perfectly integrated citric acidity. The finish is long and persistent and recalls clear mineral and saline notes. It will work perfectly with rich fish such as salmon, tuna steak, or pork.
