Originally founded in 1730, Domaine de Montille took its current name in 1863 following the marriage of Étienne Joseph Marie Léonce Bizouard de Montille to Marie Eléonore Chauvelot de Chevannes. The winery, now run by Etienne de Montille, is one of the most famous family estates in Burgundy. The organically grown Chardonnay grapes come from the over 70-year-old vineyard of less than 2 hectares located just behind Montrachet. Here the vines enjoy a privileged position with stony, shallow soil and a southern exposure. After the harvest, vinification takes place in a mix of 600-liter and 228-liter barrels (5 to 20% new) of wood from the Allier. The finished wine rests for a year in wood and then 4 to 6 months in steel. The Saint Aubin Premier Cru En Remilly is a complete and balanced white wine. It has a bright lemon-yellow color, with golden reflections. On the nose, it reveals a broad and generous aromatic profile with delicate notes of lime and white flowers, fruity aromas of pear and ripe apple, and some hints of citrus zest. On the palate, it is fresh and mineral, round and medium-bodied. It has a strong and pure character and a long and persistent finish that recalls refreshing notes of ginger. It is excellent with fish and poultry, even in lightly spiced Asian recipes.
