Drink now or cellar for a few years. No need to decant before serving. Dakishvili winery is a family business, located in a small village outside the city of Telavi in the Kakheti region of Georgia. The winery is led by Giorgi and Temuri Dakishvili, a father and son who also happen to be expert oenologists. With their expertise, and the generational knowledge passed down from Giorgi’s great-grandfather, Dakishvili produces an exceptional range of distinctly Georgian wines. Their wines are produced exclusively from family-owned vineyards, which are found in the Tsinandali PDO along the banks of the Alazani River. At an altitude of 400 metres, Dakishvili grows a variety of native Georgian fruits, including the famous Saperavi, Mtsvane, and the expressive Kisi. This fizzy wine brings out a playful side of the Kisi grape. Intoxicating scents of pear, elderflower and citrus waft from the nose of this buttery yellow wine. “Pet Nat” is short for Pétillant Naturel, or natural bubbles. Using the Georgian “Machari” method, fermentation is completed in the bottle, meaning every bottle has a unique character. An abundance of peach, ginger, caramel and banana marry on the palate, all with a delightfully frothy mouthfeel. It is perfect for a pre-dinner drink, and best served chilled.
